- Wash the fresh ginger thoroughly, peel it, and slice it into small pieces.
- Juice the lemons and set the fresh lemon juice aside.
- Add the sliced ginger and cold water to a blender, then blend until smooth.
- Pour the mixture through a fine mesh strainer into a large pitcher to remove the pulp.
- Add the fresh lemon juice and stir well until fully combined.
- If desired, add honey and stir until dissolved.
- For a second variation, keep one bottle plain and add honey to another bottle for a naturally sweeter flavor.
- Serve immediately over ice, or refrigerate for at least 30 minutes before serving.
- Garnish with fresh mint leaves and lemon slices if desired.
- Store in glass bottles in the refrigerator for up to 4 days.
